Light soup originated from Ghana and is a local spicy soup which has a watery texture.

Ghanaian light soup is quiet popular in Ghana and can be made with a variety of proteins including chicken, mushroom, grasscutter, beef, fish, lamb and many more.

It is also usually prepared with ingredients such as tomatoes, onions, pettie bell chili, garlic, ginger, etc and is usually eaten with fufu but can also be served with steamed rice, banku or boiled yam.

Today, i will take you through one of my chicken light soup recipes.

Ingredients

  • 1 large tomato
  • 1 large onion
  • fresh cut chicken
  • tomato paste
  • salt to taste
  • stock cube
  • garden eggs or okro
  • ginger and garlic

Marinade – Ginger, onion, garlic, anise seed, habanero chili.

PROCESS
Wash and clean chicken and place in a bowl. Blend your marinade and add to your chicken and steam for about 7 minutes.
Next, add tomato puree with a little bit of water. This will allow tomato to properly cook and add some flavor to your chicken.

After a few minutes, add your fresh tomato, onion, garden eggs enough water and some of your pettie bell and allow to cook for about 15 minutes.
Once cooked, take out of your vegetables and put it in your blender. Chop some ginger and blend with your vegetables.
Pour your puree into your soup and allow it to cook for an extra 20 minutes.

Once properly cooked, serve with fufu, rice or french loaf.

Light soup can be served and eaten as a starter as well.
